Perfect for when you’re sick of chocolate.
RECIPE
Ingredients:
225g butter
225g caster sugar
225g self-raising flour
4 eggs
2 lemons
7-8tbsp icing sugar
Cooking utensils:
Large mixing bowl
Electric whisk
Sieve
Grater
Rectangular baking tray
Skewer
Method:
1. Preheat the oven to 180 degrees.
2. Cream together the butter and sugar until light and fluffy.
3. Beat in the eggs one at a time until combined.
4. Sift and fold in the flour.
5. Zest the lemons and add to the mixture. Stir until combined.
6. Evenly pour into prepared tin and bake for 45 mins until golden brown.
7. Juice the three lemons.
8. Once cooked prick the cake with a skewer and pour half of the lemon juice on top.
9. To make the icing sugar: mix the other half of lemon juice and 7-8 tbsp of icing sugar together.
10. Drizzle the icing sugar on top.
